MEDITERRANEAN BUTTERBEAN AND ARTICHOKE SALAD-IN-A-JAR

Ingredients:
  • Makes 2x 500ml Consol jars
  • or 4 smaller jars
  • 2 tbsp olive oil ¼ cup lemon juice
  • 1 can butterbeans, drained and rinsed
  • A handful fresh cherry tomatoes
  • 1 small red onion, sliced
  • 1 jar preserved artichoke hearts roughly chopped
  • ⅓ cup parsley, finely chopped
  • Half a teaspoon dried thyme
  • Salt and pepper to taste
  • 2x 500ml 500ml Consol Preserve Jar
Method:
  1. In a small Consol Glass Yogi Jar add the olive oil and lemon juice and give it a good shake.

  2. In a medium-sized bowl mix all the other ingredients together then divide the salad evenly into 2x Consol Preserve Jars.

  3. You can keep them refrigerated for up to 5 days. Enjoy!
