MEDITERRANEAN BUTTERBEAN AND ARTICHOKE SALAD-IN-A-JAR
Ingredients:
- Makes 2 x 500ml Consol jars
- or 4 smaller jars
- 2 tbsp olive oil 1/4 cup lemon juice
- 1 can butterbeans, drained and rinsed
- A handful fresh cherry tomatoes
- 1 small red onion, sliced
- 1 jar preserved artichoke hearts roughly chopped
- 1/3 cup parsley, finely chopped
- Half a teaspoon dried thyme
- Salt and pepper to taste
- 2 x 500ml 500ml Consol Preserve Jar
Method:
- In a small Consol Glass Yogi Jar add the olive oil and lemon juice and give it a good shake.
- In a medium-sized bowl mix all the other ingredients together then divide the salad evenly into 2 Consol Preserve Jars.
- You can keep them refrigerated for up to 5 days. Enjoy!
